Orange Berry Love-Muffins, gluten and sugar free!



Orange Berry Love-muffins
5 mini blood oranges
1/2 cup frozen berry blend
1/4 cup unsweetened applesauce
1/4 cup agave
1/4 cup shredded coconut
2 TBSP soaked walnuts, crushed
3 eggs, beaten
1 cup almond flour
1/4 cup coconut flour
1 tsp baking powder
dash of sea salt

1. Combine first two ingredients and blend with applesauce and agave.
2. Add remaining ingredients, folding in coconut and walnuts last.
3. Pour into muffin tin and bake at 350 for 30 minutes.

I served these with cashew cream (1/2 cup soaked cashews plus 1 TBSP agave and a dash of cinnamon, blended together and refrigerated until it becomes pasty, about an hour or so).
