- Vegan Lemon Lentil Salad
- 1 cup dry green lentils
- 2 cups water
- 1 yellow bell pepper, chopped
- Juice of 1 lemon
- 2 TBSP olive oil
- handful of fresh parsley, chopped
- half a handful of fresh basil, finely chopped
- salt to taste
1. Bring water to a boil add lentils and cook over medium heat for about 30 minutes until fully cooked. Let lentils cool.
2. Combine remaining ingredients with lentils and toss.
