This is my favorite soup I have ever made and the best part is that it is RAW!
Corn Chowder
2 cups raw almond milk
2 cups organic GMO-free corn
1 large avocado
1/2 onion
1 garlic clove
juice of 1/2 lemon
cumin
cayenne pepper
sea salt
Garnish:
red bell pepper, diced
parsley, diced
1-2 TBSP pine nuts
1-2 TBSP fresh onion, diced
1. Blend all ingredients in a blender or processor till smooth, about one minute.
2. Garnish with bell pepper, parsley, pine nuts and fresh onion
