Breakfast Omelets-done two ways



Two Omelet Ideas: Serves two

The basic recipe is the same:
3 eggs
1/4 cup non-dairy milk
one onion, finely diced
salt/pepper

Recipe 1: Avocado Feta
half of one avocado, diced
1/4 cup light feta
1/2 tomato, diced
topped with 1/4 cup savory sauce (optional)

Recipe 2: Double-Onion Hummus
handful of parsley, minced
2 spring onions (1/4 cup, diced)
dash of cumin
topped with 1/4 cup hummus

1. Sautee onion over medium-high heat for 3-5 minutes, till soft.
2. Beat three eggs and 1/4 cup non-dairy milk in a small bowl. Shake and swirl the pan until all the pan is coated with the eggs.
3. Add remaining ingredients into saucepan and cook for 3 minutes over medium heat.
4. Top with hummus or savory sauce (optional).

We served our eggs with fresh fruit. Kiwi with the Avocado Feta Omelet, and grapefruit, strawberries and banana with the Double-Onion Hummus Omelet.

Baby goat cheese salad, with cranberries, pine nuts and avocado

Baby goat cheese salad, with cranberries, pine nuts and avocado
one large head of lettuce (your choice, we used romaine)
one large avocado, diced
1/4 cup pine nuts
1/4 cup dried cranberries
8 oz of baby goat cheese

1. Wash lettuce and place in a large salad bowl. Add avocado, pine buts and cranberries. Top with scoop of baby goat cheese in the center of the salad.
2. Drizzle with a balsamic glaze. (Note: If you prefer to eat a bit lighter this salad is full of enough flavor to eat without any dressing/glaze.)

Scrumptious Salmon Burgers




Salmon burgers are a GREAT alternative to traditional burgers. Not only are these fish cakes delicious and light, they are also full of good-for-you-stuff! For starters, salmon is loaded with omega- fatty acids, which are essential for human health (fatty acids cannot be made by the human body, so it is vital we get these acids from outside sources). Salmon is also a great source of protein, niacin, vitamin B12, phosphorus, magnesium and vitamin B6.

Scrumptious Salmon Burgers
1.5 cup red/yellow bell peppers (I mixed both)
1 cup breadcrumbs (you might add a bit more if mixture is too soft)
1 onion, diced
3 cloves of garlic, minced
700g of salmon
1 egg, beaten
1 handull of parsley
1 TBSP soy sauce
1 TSP lemon juice
1/2 TSP salt
1/2 tsp cumin
olive oil
**Served with gravad lax sauce (recipe is archived for your use), tomatoes, peppers, roasted onions and iceberg lettuce



1. Combine all ingredients in a food processor and process for about 1 minute.
2. Form into 10 patties and grill with olive oil over the stove for about 5-6 minutes on each side over medium heat.
3. Serve with vegetables and gravad lax sauce (dill-mustard sauce.)

I made this for some friends that joined us for dinner and we all delighted in building our own messy combinations! It was nice that I was able to pre-prepare the burgers (half a day earlier), refrigerate and then grill right before we were ready to eat. This way the burgers were served hot. We wrapped the burgers in lettuce, which acted as a burger bun. This lightened our meal and gave the salmon extra crunch. This dish went fantastic with roasted asparagus and a goat cheese salad. Breakfast as usual- FIBER

Did you know that the average woman should eat 25g of fiber and the average man 38g. Unfortunately a majority, and I mean majority, of the population eats only 13g of fiber a day! Not eating enough fiber can lead to obesity, diabetes, heart disease and even cancer. Fiber has an inverse relation to high glycemic foods- what this means is that high fiber foods help regulate blood sugar and keep you full for longer. They also negate some of the absorption of fat and cholesterol into the body. These fiber cakes below give you 55% recommended fiber in only ONE cake. (The recipe is archived for you!)
  1. Homemade fiber cakes with blueberry jam (fiber cake recipe)
  2. Homemade muesli with banana and natural, unsweetened almond milk (Fie's muesli recipe with the addition of coconut, walnuts, and organic high-bran cereal)
  3. Sliced strawberries and bananas
  4. Fair trade-organic green tea infused with raspberries and ginseng

Nikos' Almost Famous Halvas Recipe



Nikos truly has a knack for making delicacies and desserts. This is my favorite dessert recipe of all time, Halvas, which is a Greek specialty. Halvas taste best when you are eating it in Greece, usually due to the local ingredients used(honey, olive oil, nuts). Nikos has made this version lighter than the traditional version, yet it still tastes just like the original. I think it tastes particularly good because of the chef ;)

Cake
2 cups of semolina
1/2 cup sunflower oil
1/4 cup olive oil
1/2 cup walnuts, chopped coarsely
1/4 cup raisins

Syrup
4 cups water
2 cups honey (or sugar, or sugar with honey)
3 small pieces cinnamon stick
2-inch piece of orange peel
4 whole cloves
Ground cinnamon and chopped walnuts for dusting

1. To a medium saucepan, add the water, honey, cinnamon sticks, cloves, and orange peel. Boil for 5 minutes then lower the heat and simmer gently.

2. Remove the cinnamon, clove and orange peel before pouring.

3. In another larger saucepan, over medium high heat, add the oil and heat until shimmering. Add the semolina and cook, stirring frequently to prevent sticking. Cook the semolina in the oil until the grains begin to toast and turn a deep golden color.
4. Remove the pot from the heat and carefully add the hot syrup to the semolina mixture. (The semolina is going to sizzle so be careful not to burn yourself. SAFETY TIP!!)
5. Stir in the walnuts and raisins and continue to cook until the semolina absorbs all the liquid. Cover the pot tightly and set aside to cool for 10-15 minutes.
6. Spoon the mixture into a pudding mold or into individual cups. Allow the pudding to cool to room temperature before serving.
7. To serve, sprinkle with cinnamon and some more chopped nuts (if desired some honey/agave as well).
