Vegan Lemon Lentil Salad

  • Vegan Lemon Lentil Salad
  • 1 cup dry green lentils
  • 2 cups water
  • 1 yellow bell pepper, chopped
  • Juice of 1 lemon
  • 2 TBSP olive oil
  • handful of fresh parsley, chopped
  • half a handful of fresh basil, finely chopped
  • salt to taste

1. Bring water to a boil add lentils and cook over medium heat for about 30 minutes until fully cooked. Let lentils cool.
2. Combine remaining ingredients with lentils and toss.
