Apple Cinnamon Bread, Raw


Delicious raw bread right out of the dehydrator and topped with coconut oil and fresh fruit.

Apple Cinnamon Bread, Raw
2 cups ground flax seeds (golden seeds taste better than the darker seeds)
1 cup raw almonds (soaked 24 hours)
3/4 cup black raisins (soaked for 1-3 hours)
2 organic apples, sweet apples are best!
2 TBSP agave or a dash of stevia
1 TSP vanilla
1 TBSP cinnamon
1 TSP sea salt

1. Process all ingredients in a blender till well mixed. 
2. Form into loaves on teflex sheets and dehydrate for 14 hours, flipping the loaves after 7 hours or so.
3. Top with coconut oil and fresh fruit.

Sweet Corn Bread, Raw


Raw Sweet Corn Bread
1 cup raw almonds (soaked 24 hours)
1 cup raw cashews
1/2 cup raw pine nuts
1 1/4 cups fresh or frozen organic non-GMO corn
1/4 cup agave
1 tsp sea salt
Dash of cumin
1 cup ground flax seeds

1. Process all the ingredients till well mixed and roll flat onto a teflex sheet.
2. Place in the dehydrator for 10-12 hours.
3. Cut into squares and enjoy!

Longevity Sun Pate


 Longevity Sun Pate
1 cup raw cashews
1/2 red-bell pepper
1/2 cup sun dried tomatoes in olive oil
Fresh basil, 2 leaves
1 TBSP raw tahini

1. Process all ingredients in a blender.
2. Use as a dip, pasta sauce or spread.

Black Olive, Slivered Almond and Caramelized Onion Salad


Black Olive, Slivered Almond and Caramelized Onion Salad
One large bunch of organic greens (enough for two salads)
1 cup Greek black olives, de-pitted
one cup of organic sweet cherry tomatoes, halved
1/3 cup slivered almonds
1 onion, diced
2 TBSP olive oil
Juice of 1 lemon
Seaweed  (garnish)
1. Sautee onion with olive oil over medium heat for about 5-7 minutes, till caramelized.
2. Meanwhile, prepare salad and set aside.
3. Allow onions to cool till slightly warm and toss with salad.
4. Add juice of one lemon and seaweed to garnish.

If you prefer to have a raw dish, replace the caramelized onions with raw onions.

Coconut Cherry French Toast


Coconut Cherry French Toast
(serves two)
Two large handfuls of fresh organic cherries, de-pitted
3 organic free-range eggs
4 pieces of gluten-free bread (I used rice bread)
1/2 cup full-fat coconut milk
1 TSP cinnamon
2 TBSP agave
Coconut oil
Shredded Coconut (garnish)
1. Mix eggs, coconut milk, cinnamon and agave in a bowl.
2. Dip bread in egg mixture and let sit for about 2 minutes.
3. Grill in a pan with coconut oil for about 3 minutes on each side.
4. Transfer bread to a plate and top with fresh cherries, shredded coconut and a drizzle of coconut oil.

This was one of the best french toast recipes I have ever had. The rice bread was moist and the flavor fit perfectly with the cherries and the coconut.

Raw Chewy Coconut Bites


Raw Coconut Chewy Bites
Too good to be true!

1/3 cup dates
1 tsp raw coconut oil
2 TBSP coconut shreds
1/4 cup raw cashews

1. Process till finely blended, about 1 minute.
2. Roll into balls and then roll again in coconut shreds. 
3. Refrigerate for 30 minutes to set and enjoy!
Keeps for 2 weeks in the fridge.

Quick Road Snack: Banana Tahini Cakes


Banana-Tahini Cakes
Brown rice cakes or crackers of your choice
Bananas 
Dried cranberries or goji berries
Organic Tahini
Napkins, a knife and a spoon

A great sandwich builder, high in calcium and B-vitamins and boosts the digestive tract. Tahini does not require refrigeration until after the jar is open so this treat makes for a great road snack!

Raw Eggplant Pizza


Raw Eggplant Pizza

1 eggplant, sliced thin
1/2 cup sun-dried tomatoes, in oil
1 handful fresh basil or 1 tsp ground basil
5 small dates, or 3 medjool dates
Sliced red bell pepper, avocado slices (optional)

1. Dehydrate eggplant for about one hour and fifteen minutes and flip over.
2. Blend remaining ingredients and lather on eggplant slices.
3. Dehydrate for 1 more hour.
4. Remove; top with fresh red bell pepper or sliced avocado.

Sunscreen- beware!

As you head out to the beach make sure the sunscreen you use does not contain oxybenzone, a harmful chemical that has been proven to cause cancer when it comes in contact with the sun. What an oxymoron- suncreen that causes cancer! Just another indication that we must each take personal responsibility for our health.

A recent study by the Environmental Working Group found that 97% of Americans contain toxic sunscreen chemicals in their bodies!

Please read your products before buying them and avoid harmful chemicals that put a strain on your health.Other chemicals to watch out for include: parabens in lotion, sodium laureth sulfate, which is in any product that bubbles and also in kid's toothpaste, and sodium laurel sulfate, which is also used to create a foam.
Please enhance your awareness and choose health for you and your family.

Nutrition on the road

I travel quite a bit and always make sure to bring healthy foods with me. It doesnt take much time once you get in the habit of planning ahead. I feel so much healthier and full of energy it is worth any extra effort!! Friday evening we arrived in Mykonos and for our Saturday morning breakfast we made a large fruit salad with goji berries and ground flax seeds (which I packed with me in my suitcase.) At the beach I ordered a spinach salad with sundried tomatoes ad asked the kitchen to remove the cheese, add avocado and dress the salad with olive oil and lemon. I also added brazil nuts (from my bag) to the salad for extra selenium and protein. Today I will order a similar salad and have brought sunflower seeds and seaweed to add to the salad. Below is a list of my Mykonos road snacks: Raw Brazil nuts Raw Pistachio nuts Fresh fruit Sunflower seeds Pumpkin seeds Goji berries Ground flax seeds Ground seaweed/nori sheets Green probiotic powder Raw protein powder Spirulina and kelp tablets The list changes from trip to trip but generally includes these items. Sun dried tomatoes can be packed as well and soaked for 10 minutes before eating. Happy travels!!!

Raw Chocolate Banana Silk





Raw Chocolate Banana Silk
1 banana
1 TBSP chia seeds
1 TBSP raw cacao powder

1. Blend in a processer for about 30 seconds.
2. Transfer to a a bowl and let sit for about 4 hours.
3. When ready to serve, top with fresh sliced banana.
