Raw Lasagna

Here is a quick picture of my dinner tonight- Homemade Raw Lasagna. DELICIOUS!

4 zucchinis, sliced thin (marinated in lemon/lime and olive oil for 2 hours)
Ricotta cheese:
1 cup cashews
2 TBSP parsley
2 TBSP lemon juice
1 TBSP nutritional yeast-optional
Wilted spinach leaves

1. Layer the zucchini, beef, tomato sauce, cheese and spinach, repeating twice.
2. Let sit for one hour to marinate and serve!
