Fluffy Blackberry Coconut Cream


1/2 cup full or low-fat coconut milk
3-4 TBSP chia seeds
1-2 TBSP raw cacao nibs
Fresh blackberries, banana, peaches
Dash of cinnamon
Dash of flax seeds

1. Mix coconut mil and chia seeds, till well blended. 
2. Add nibs and refrigerate for at least 4 hours (I leave it overnight.)
3. Top with fresh fruit, flax and cinnamon.

Raw Coco Pebbles



1 cup buckwheat, soaked 8 hours and well rinsed
1 1/2 TBSPs cacao powder
2TBSPs Honey
Dash of cinnamon

1. Mix soaked buckwheat with cacao, honey and cinnamon.


2. Dehydrate 12 hours or so. 


Enjoy with fresh nut milk and fruit, or eat as a plain snack.

Greek Pizza, Gluten-free

1 gluten-free pizza crust
1/4 cup Bio goat feta cheese or vegan cheese
One cup baby tomatoes, cut in half
1/4 cup Greek olives
Dash of dried basil
Drizzle of Greek olive oil or coconut oil

1. Assemble on pizza crust.
2. Bake at 180C for 12 minutes.

Anika's Homemade Protein Shake


Many people at work ask me if I take happy pills, due to my tendency to smile. I know that part of this energy I have shines through due to my diet and my spiritual program. One thing that sets my morning off right is my breakfast protein shake. Remember that our bodies are detoxing from the hours of 4AM-12PM so it is helpful to eat raw during these hours so that the body can perform detoxification at its optimum level. 

Anika's Homemade Protein Shake
1 cup cold filtered water
1 banana (frozen or refrigerated is a great option too!)
1 TBSP bee pollen
1 TBSP maca powder
1 TBSP raw coconut oil

1. Blend in a blender and drink away!

Honey Chocolates



1/4 cup coconut oil

1 tbsp raw Greek honey
2 tbsp raw cacao nibs
2 tbsp raw cacao powder
Dash cayenne pepper

1. Mix and pour into an ice cube tray. 
2. Drizzle a bit of honey on top with the tip of a fork. 
3. Set in fridge or freezer for about an hour. 

Yummmmy!

Homemade Cat Food



Homemade Cat Food

3 Biological chicken breasts
Handful of Organic corn
Handful of Brussels sprouts
Handful of Green beans
Olive oil (optional)

1. Boil together in a large pot of water for 45 minutes.
2. Process till smooth in a blender.
3. Make little servings by forming into balls and freeze.

We place defrost Cricket's breakfast in the fridge the evening before and in the morning we defrost her dinner. You can drizzle some olive oil before serving if you wish.

Don't allow your animals to eat canned animal food!

Raspberry French Toast, gluten and dairy free


Raspberry French Toast
4 pieces of gluten free bread (I used rice bread)
3 organic eggs
3/4 cup coconut milk, full-fat
1/4 tsp raspberry extract
1 TSP agave
Coconut oil, for frying

Garnish:
Fresh berries or fruit
Agave or raw honey

1. Blend eggs, milk, extract and agave. 
2. Soak bread for 3 minutes in egg mixture.
3. Heat frying pan to medium, add a splash of coconut oil.
4. Fry bread on each side about 3-4 minutes.
5. Top with fresh berries, and raw honey or agave.

DELICIOUS!!!!

Raw Nectarines and Cream Sunflower Tart


Raw Nectarines and Cream Sunflower Tart

1/4 cup tahini
1/4 cup raw sesame seeds
1/4 cup sesame seeds, white
Topping: 
Freshly sliced seasonal fruit (I used nectarines)

1. Mix first three ingredients in a bowl and shape on a plate in a circle.
2. Refrigerate for 1 hour to set.
3. Before serving, top with fresh coconut cream and nectarines.

Tamari Sesame Buckwheat Pasta, vegan and gluten-free


Tamari Sesame Buckwheat Pasta
1 bag buckwheat pasta 
one large onion, peeled and cut in half
2 heads of fresh organic broccoli
handful of cherry tomatoes
2 TBSP sesame seeds
1-2 TBSP tamari sauce
juice of 1 lemon
Kelp flakes (optional)

1. Bring water to a boil. Add buckwheat and onion. 
2. Cook for about 10 minutes (add broccoli after 5 minutes), stirring often to prevent clumping.
3. Remove from heat and give a quick rinse.
4. Process onion is a mini blender, add tamari sauce and lemon juice.
5. Toss pasta with onion sauce and garnish with fresh sesame seeds and tomatoes.
6. Garnish with kelp flakes for an iodine boost!

Raw Chocolate Burst
1/3 cup dates
1 tsp raw coconut oil
2 TBSP coconut shreds
1/4 cup raw cashews
2 TBSP raw cacao powder

1. Process till finely blended, about 1 minute.
2. Roll into balls and then roll well in raw cacao powder. 
3. Refrigerate for 1 hour to set and enjoy!

Keeps for 2 weeks in the fridge

Raw Chocolate Greek Bites
1/3 cup dates
1 tsp raw coconut oil
1 TBSP raw cacao powder
1/4 cup raw almonds
Extra ground almonds to garnish

1. Process till finely blended, about 1 minute.
2. Roll into balls and then roll again in almond pieces. 
3. Refrigerate for 30 minutes to set and enjoy!

Keeps for 2 weeks in the fridge.

Cinnamon Almond Amaranth, high protein, fiber, calcium, iron and gluten free


Cinnamon Almond Amaranth 

 1 cup amaranth
2 1/4 cups water
2 TSP Cinnamon
1/3 cup slivered almonds
1/4 cup shredded coconut
2 TBSP coconut oil
Honey, agave or stevia to taste
1/2 cup coconut milk

1. Cook amaranth for 3 min at a boil.
2. Reduce to simmer 15 min. Stir often.
3. Remove from heat and mix in all ingredients except sweetener and milk.
4. Garnish with honey, agave or stevia and coconut milk while still warm.
Yum!!

Amaranth is pseudocereal, meaning a broadleaf plant being used much the same as a grain. Amaranth is in the gluten free family and has the highes amount of fiber, calcium, protein and iron in its class.  Amaranth is great for those that have internal dampness as it causes a heating effect within the body. Adding cinnamon also enhances the body's ability to "dry out."

Chocolate Cranberry Buckwheat Pancakes, dairy and gluten free


Chocolate Cranberry Buckwheat Pancakes
1 cup buckwheat flour
3/4 cup coconut milk
1 organic egg
1/4 cup raw cacao
1 banana, mashed
dash of stevia
Coconut oil, to fry

Garnish with:
Dried cranberry/fresh banana slices 
Agave or raw honey (optional)

1. Mix together in a bowl with a fork.
2. Pour a dash of coconut oil into a frying pan and turn heat to medium.
3. Add 1/4 cup of batter to pan and fry for 2 minutes on each side.
4. Top with raw honey or agave, dried cranberries and fresh banana slices.

Makes 6-8 pancakes.

Raw Banana Taffy Ice Cream



Raw Banana Taffy Ice Cream
2 bananas
1 TBSP tahini
1 TBSP honey
8 walnut-halves
Garnish: banana slices, crushed walnuts (optional)

1. Peel and freeze bananas for about 3 hours.
2. Remove from freezer and blend with remaining ingredients.
3. Garnish with fresh walnuts, banana slices and serve immediately!

Raw Raspberry Chocolate Truffles


Raw Raspberry Truffles
1/4 cup raw coconut oil, melted over soft heat
1 TBSP raw cacao nibs
1 TBSP raw cacao powder
1 TBSP agave (a little less than 1 TBSP)
1/2 TSP raspberry extract
1. Mix together with a spoon in a bowl.
2. Pour into ice cube molds (IKEA has great shapes available, such as heart, fish and flowers)
3 Refrigerate for at least 3 hours to set. You can also freeze them to set faster (about 1 hour to set).

Delicious with a cup of vanilla or cherry tea and fresh berries!!
