Peppery Eggs


Another twist on your morning scramble. The farmer's market had beautiful peppers and I could not resist buying some to nibble on.


Peppery eggs
5 eggs
1/4 cup water
1/2 onion
1/2 TBSP olive oil
2 garlic cloves, minced
1/2 red bell pepper, organic (local if possible)
1/2 green bell pepper, organic (local if possible)
sea salt

Serves two :)

1. Saute onion with a dash of olive oil over medium heat for 3-4 minutes.
2. Blend eggs with water and pour over onions. Cook for 4-5 minutes. Add garlic.
3. Put eggs on serving plates, top with salt, and pair with chopped bell peppers.
