Sweet MIso Tahini Glaze with Eggplant and Bell Pepper

 Miso Glaze with Eggplant
2 fresh eggplants, diced
coconut or olive oil
2 yellow/green bell peppers
1/2 cup miso sauce

1. Sautee eggplant with oil over medium heat for fifteen minutes, stirring often.
2. Top with fresh bell pepper and miso glaze.
