Eggplant Done Easy
2 small eggplants, diced
1/8 cup coconut oil
sea salt, optional
1. Dice the eggplant and cook over medium heat with coconut oil for about 15 minutes. Stir continuously to avoid burning.
2. Add basil and sea salt about one minute before you pull from the stove.
