one large head of lettuce (your choice, we used romaine)
one large avocado, diced
1/4 cup pine nuts
1/4 cup dried cranberries
8 oz of baby goat cheese
1. Wash lettuce and place in a large salad bowl. Add avocado, pine buts and cranberries. Top with scoop of baby goat cheese in the center of the salad.
2. Drizzle with a balsamic glaze. (Note: If you prefer to eat a bit lighter this salad is full of enough flavor to eat without any dressing/glaze.)
