Breakfast Omelets-done two ways

Two Omelet Ideas: Serves two

The basic recipe is the same:
3 eggs
1/4 cup non-dairy milk
one onion, finely diced

Recipe 1: Avocado Feta
half of one avocado, diced
1/4 cup light feta
1/2 tomato, diced
topped with 1/4 cup savory sauce (optional)

Recipe 2: Double-Onion Hummus
handful of parsley, minced
2 spring onions (1/4 cup, diced)
dash of cumin
topped with 1/4 cup hummus

1. Sautee onion over medium-high heat for 3-5 minutes, till soft.
2. Beat three eggs and 1/4 cup non-dairy milk in a small bowl. Shake and swirl the pan until all the pan is coated with the eggs.
3. Add remaining ingredients into saucepan and cook for 3 minutes over medium heat.
4. Top with hummus or savory sauce (optional).

We served our eggs with fresh fruit. Kiwi with the Avocado Feta Omelet, and grapefruit, strawberries and banana with the Double-Onion Hummus Omelet.
