Raw Tuna Lettuce Cups
2 cups of almonds, soaked and blanched
3 stalks of celery, finely diced
1/2 onion, diced
juice of one lemon
2 garlic cloves, minced
1 TBSP dulse or kelp powder
handful of parsley, chopped
one red cabbage
1. Add all ingredients to a processor and grind till fine.
2. Place a spoonful of tuna salad in cabbage leaf and eat like a wrap.
I served this dish with avocado mayo and red bell pepper hummus.
