This recipe serves two hungry people!
Smoked Salmon Goat Cheese Wraps
2 sprouted tortillas
smoked salmon for two
1/4 cup goat cheese
4 TBSP hummus (I used eggplant hummus)
1 handful organic spinach
1/2 organic red bell pepper, diced
1. Spread 1/8 cup hummus on each tortilla.
2. Top with remaining ingredients and wrap up!
I paired this dish with fresh cut cucumber. Such a great lunch option-flavorful and nutritious!
