Coconut Carrot pancakes, gluten free

1 cup soaked and dehydrated buckwheat
4 organic omega-3 eggs
1 handful of organic parsley
2/3 cup shredded carrots
Sage, sea salt

1. Blend all ingredients together.
2. Fry with coconut oil over medium heat, about 2 minutes per side.

I topped with homemade fermented ginger carrots and miso-tahini glaze.

Amazing!!

Soured porridge with fermented ginger and carrot

This is a great way to start the day. I mean I cannot begin to tell you how good this feels in my stomach. Fermentation baby!!

1 cup organic millet, freshly ground
2 cups filtered water

1. Mix together and let sit for about 2-4 days at room temperature.
2. Take 3/4 cup millet and add to 1/2 cup boiling water. Reduce heat and stir until hick, about one minute.

Grass-fed butter
Garlic clove
Fermented veggies

3. Pull from heat. Add one clove of freshly pressed garlic, some grass-fed butter, and a large spoonful of fermented veggies. I used my fermented carrot-ginger blend.

This is delicious and a common food in Africa. You can let the millet sour for longer, up to one week or so. I will make my second batch tomorrow- can't wait!

Coconut oatmeal cookies

1 cup steel cut oats, ground a bit
1 cup quinoa flour
1/3 cup shredded coconut
1/2 cup coconut sugar 
1/4 cup coconut oil
1 large banana
1 organic egg
1 vanilla pod
Handful of organic walnuts
Dash of sea salt

1. Mix all ingredients together and put in fridge for one hour to harden.
2. Roll into balls and bake at 180c for 13 minutes!

I topped these cookies with ground coconut flakes.

Quick coconut tahini ice cream

This is quick and divine!

1/2 cup coconut milk (I scraped mainly fat from the top of the can)
1 TBSP coconut oil
2 TBSP tahini
Splash of nutmeg and cinnamon
Stevie to taste 

Blend in a bowl and pop in the freezer for 30 minutes and you are good to go!

Chocolate Chip pancakes, gluten free

1 cup steel cut oats, soaked over night in water
3 organic, omega 3 eggs
1/3 cup coconut shreds, thick
Optional salt and cinnamon

1. Combine ingredients and whips together with a fork.
2. Using coconut oil or organic grass fed butter, fry pancakes for 2 min per side.
3. Top with jam and coconut sugar or with tahini and cacao nibs!

Delicious!!!
